Chef Pubilis is probably the most knowledgeable in Sri Lankan
cuisine. His 50 years in the trade has taken him to exciting
heights in his career. His training under the Hyatt management,
his passion for excellence and his pride of been a Sri Lankan
has made him the master. His expertise earned him the enviable
position of personal chef to Late Sir Oliver Goonatileka, one
time Governor General of Sri Lanka and Late Sir John Kotalawala,
one of the feisty Prime Ministers of Sri Lanka. Today, he is
a consultant to four luxurious resorts in the Maldives and two
hotels in Sri Lanka. He is a much sought after figure by culinary
programs world-over.
Having traveled extensively, his knowledge in food is vast and
enormously interesting. His expertise spills from authentic
Sri Lankan cuisine, to contemporary dishes to the mysteries
of vaddhi cooking.
Chef Pubilis’s
remarkable achievements include:
Introducing the preservation
of Sri Lankan food for over two years without the use of any
preservatives or refrigeration
Introducing a dry curry powder containing
all curry ingredients required to make a proper Sri Lankan curry
to be cooked in 20 minutes
Entering the Guinness Book of Records by cooking
the largest and longest milk rice. The accompanying katta sambol
(a very hot mixture of crushed shallots, red chili, dried fish,
lime and salt) weighed 240 kg and was pounded manually by 12
chefs
Today, he is the
beloved Heart-throb of every Sri Lankan housewife. His television
programs run in almost every television channel. His mission
in life has become to impart the knowledge he has gained over
a lifetime to his adoring public. Despite his fame and the
love poured from a nation, he remains a very simple and humble
man.
