Bilin
Bilin makes a fabulous curry, which is literally a ‘rice-puller’ than it ever would make a drink, laughs Mr. Fernando. Nevertheless, bilin is a fruit that cannot be overlooked just because it doesn’t make a good drink he says. Describing the fruit, he explains that bilin is visually a midget cucumber with its luscious golden green skin and a translucent white flesh. However, it is so tangy that the mere thought of it, as tamarind would, activates the salivary glands! This is used both as a native medicinal ingredient as well as a spice in Sri Lankan cuisine.
He continues that this vitamin C rich fruit is not only a great taste enhancer, and thus an appetite builder, but also essential for good

health. Sri Lankan food is classified as ‘heaty’ and ‘cooling’ and bilin are considered as a coolant. Furthermore, he said, that bilin is believed to help with proper liver functioning and necessary for a good, glowing skin.
