The Snake Gourd Sambol
The snake gourd, a long, slim, green vegetable, is very popular for its lightness in texture. The white snake gourd curry is a favorite for its easy digestive properties.

This crunchy, easy-to-prepare sambol is both a great starter and an excellent accompaniment with rice.
 
Ingredients
1. 500g snake gourd
2. 1 tsp salt
3. 1 cup water
4. ¼ cup thick coconut milk
5. 4 - 5 red onions, sliced
6. 1 tsp lime juice
   
   
   
   
   
Serves 6
Method
1. Scrape the skin off the snake gourd - same method as cleaning carrots. Half it lengthwise and scrape the insides with a spoon. Cut into julienne strips and steep in salt water for about 15 minutes. Squeeze and drain the snake gourd.
2. Mix with coconut milk and sliced red onions. Combine well with lime juice. Adjust salt and lime to taste.
   




Variation:
Instead of coconut milk and lime juice, use mayonnaise.
