Garlic Fried Rice Seasoned with Capsicum & Maldive Fish
The unusual combination of capsicum and maldive fish makes this garlic rice exotic. The best accompaniments are crispy potato chips, sliced fresh ripe tomatoes and seer fish fried after seasoning with salt, chili powder and pepper. This exotic rice dish with its simple accompaniments makes this the perfect meal for all those special, family functions.
 
Ingredients
1. 3 tbsp ghee or butter
2. 2 onions, diced
3. 8 garlic cloves, diced
4. 2 tbsp maldive fish
5. 5 capsicum peppers, sliced breath wise
6. 2 cups cooked rice
7. 2 cubes of vegetable stock
8. Salt to taste
Serves 6
Method
1. Over medium heat, melt the ghee or the butter. Temper the onions until translucent. Add garlic and cook until fragrant. Add the maldive fish and continue to cook for about 5 more minutes. Add the capsicum and season with salt.
2. Add the cooked rice and combine thoroughly. Crumble the stock cubes over the rice, mix well and remove from heat. Serve immediately.
 
 Chef’s tip:
If possible, use suduru samba rice. If this rice is not available, select a short, soft white grain.
