White & Dark Chocolate Mousse with Orange & Strawberry Sauce

Ingredients
For the Mousse
1. ½ L fresh cream
2. 10 eggs, yolks separated from the whites
3. 300 g dark chocolate, broken to small pieces
4. 250 g white chocolate, broken to small pieces
5. 1 teacup hot water
6. 2 tbsp brandy
7. 1 tsp gelatin
8. 50 ml orange sauce
9. 50 ml strawberry sauce
For the Orange Sauce
1. 100 ml orange cordial
2. Juice of 2 fresh oranges
3. 150 g sugar
4. 50 g corn flour
   
For the Strawberry Sauce
1. 100 ml strawberry topping
2. 100 ml water
3. 60 g sugar
4. 30 g corn flour
Serves 6
Method
1. Whip cream until fluffy. Refrigerate.
2. Whisk egg whites while gradually adding sugar until a stiff meringue forms.
3. Mix egg yolks with the cream and fold into the meringue. Use a wide spatula to incorporate air into this mixture. Divide equally into two bowls.
4. Melt dark chocolate on top of the hot water. Add to one of the bowls. Repeat for white chocolate and add that into the remaining bowl.
5. Mix brandy to dark chocolate and gelatin to the white chocolate. Refrigerate.
6. Dilute orange cordial with orange juice. Add sugar and thicken with corn flour.
7. Dilute strawberry topping with water. Add sugar and thicken with corn flour. If color turns muddy, add a drop of coloring.
8. Place a scoop of dark chocolate mousse and a scoop of white chocolate mousse on the serving plate. Drizzle sauces around it. Serve immediately.
