Wash the rice and place in a saucepan. Add water until about 1" above the rice level. |

Boil until the rice is cooked, but the grains not yet separated. |

Mix the coconut milk and salt and add it to the cooked rice. |

Leave on slow fire until the coconut milk is absorbed. |

Spoon out to a rice dish and flatten with the aid of a banana leaf. Before the rice sets, cut into
2” x 2” diamond-shaped squares by passing the knife diagonally and then again in the opposite direction. |
