This very easy dish is quite popular as both part of an every
day meal as well as an accompaniment with yellow
rice. This also serves as a great filling for toasted sandwiches.
Ingredients

4 - 6 small to medium size potatoes

1 tsp salt
3.
¼ tsp turmeric powder
4.
1 tbsp oil
5.
1 tbsp chili flakes
6.
4 - 5 green chili, deseeded if desired

1 large onion, sliced
8.
2 tsp maldive fish
9.
1 sprig of curry leaves
10.
1 ½" curry leaf

Method
1.
Boil and skin the potatoes. Half the potatoes (if
small. If medium, then quarter the potatoes). Sprinkle with
salt and turmeric powder.

Heat the oil in a wok and sauté the remaining ingredients. When
the onions are turning golden, add the potatoes and toss until
well mixed. Remove from heat and serve.
