Katta Sambol
Ingredients
1. 10 – 15 shallots
2. 1 tbsp ground chili powder
3. 1 tbsp maldive fish flakes
4. Salt and lime to taste
Serves 4

Method

1.Place all the ingredients in a motor and pound well with the pestle.

Difference between lunu miris and katta sambol: lunu miris is the basis of sambol and consists of only red onions crushed with a mortar and pestle with salt, chili powder (1 tsp) and lime juice (added after the above mixture is prepared). This is a very moist paste. When maldive fish flakes are added, the moisture is absorbed by the dry flakes, making this a very dry mixture, hence earning the name 'katta' which means dry.
