Kokis
This is a thinner, crispier version of cookies. |

| 1. |
½ lb rice flour |
| 2. |
1 cup thick coconut milk |
| 3. |
¼ an egg, beaten |
|
| 4. |
½ tsp salt |
| 5. |
¼ tsp saffron |
| 6. |
Oil for frying |

| Special utensils : 1 kokis mould |

Serves 18 – 20 |
Method |
| 1. |
Mix flour with coconut milk. |
| 2. |
Add the egg, salt and saffron. |
| 3. |
Rest the batter for ½ hour. |
| 4. |
Heat the oil. |
| 5. |
Dip the mould in the oil and then in the batter and then back in the oil to fry it crisply. |
