Aluwa

Appearances can be deceiving and especially so for aluwa. This is cut into diamond shape and looks as hard, but melts in the mouth in puffy crumbles
 
Ingredients  
1. 50 cashew nuts
2.

½ lb sugar

3.

½ oz butter

4.

3 oz milk

5.

½ - 1 tsp rose essence

Serves 12 – 15
 

Method

1. Finely chop the nuts.
2. Add sugar, butter and milk into a saucepan and over low heat stir until sugar melts.
3. Add the nuts and cook until mixture thickens. Remove from fire.
4. Add the rose essence.
5.

Put into a dish rinsed with cold water and cut into diamond-shape pieces when nearly cooled.
