Passion Fruit Yoghurt

There are 2 varieties of passion fruits in Sri Lanka and both are equally good for this recipe.

 
Ingredients
 
1. 200 ml milk
2. 100 g sugar
3. 4 egg yolks, beaten
4. 10 g gelatin
5. 250 g curd
6. 100 ml passion fruit juice
For the meringue:
1. 4 egg whites
2. 100 g sugar
3. 150 g whipped cream
   
   

Serves 4

Method
1. Boil milk and sugar together and add the egg yolks
2. Remove from fire as soon as the mixture starts to boil again
3. Add the gelatin and allow to cool
4. Add curd, passion fruit juice and mix well
5. Make the meringue by first beating the egg whites and sugar until thick
6. Add the whipping cream into the meringue mixture
7. Mix the meringue mixture into the passion fruit mixture and spoon into a mould and refrigerate. Once set, remove from mould and decorate with fresh passion fruit seeds
