Waraka Flambé with Palm Treacle Ice Cream
Waraka is the much loved fruit that is sweet and causes windy mischief. |

200 g sugar |

50 g unsalted butter |
| 3. |
100 ml orange cordial |
| 4. |
250 g waraka (ripe jackfruit) |
| 5. |
50 ml Kirsch liqueur |
| 6. |
4 scoops vanilla ice cream |
| 7. |
2 tbsp palm treacle |

| Serves 4 |
| Method |

Caramelize the sugar |
| 2. |
Add the butter and then the orange cordial |
| 3. |
Add waraka and mix well |
| 4. |
Add Kirsch. The heat will instantly bring out the flame |
| 5. |
Arrange on 4 separate serving plates with a scoop of ice cream. Drizzle palm treacle on top and serve immediately. |
