Despite the darkish brown color, this tuber dish, though spicy, is quite mild. It has the soft tones of tanginess and can be easily enjoyed with only white rice. Its fibrous texture helps absorption of extra sugar levels making it ideal for diabetic suffers
Ingredients

250g fresh lotus root

1 tsp mustard seeds
3.
1 onion, chopped
4.
3 - 4 green chilies, sliced, and if desired deseeded

1 sprig curry leaves
6.
1” pandan leaf
7.
¼ tsp turmeric powder
8.
½ tsp salt
9.
1 tsp chili powder
10.
1 tbsp oil
11.
1 tsp fenugreek
12.
1 large tomato, chopped
13.
1” cinnamon stick
14.
¼ cup water

¼ cup thick coconut milk
Serves 6
Method
1.
Cut both ends of the root and scrape the skin off as done with a carrot
2.
Cut into 2” pieces and run through water to remove soil
3.
Slice into julienne strips
4.
Heat oil and put the mustard seed. Allow the seeds to burst and add all the ingredients except the coconut milk
5.
Bring to boil and add the coconut milk. Allow to simmer for a couple of minutes, adjust seasoning and remove from fire
