Milk Rice
This sticky rice is shaped and cut into diamond pattern and is always part of any and every auspicious event taking place in Sri Lanka. The milk in the milk rice is to symbolize prosperity. |

1 cup raw-rice or country rice |
| 2. |
2 cups thick coconut milk |
| 3. |
salt |

| Serves 4 |

- Wash the rice and place in a saucepan. Add water until about 1” above the rice level.
- Boil until the rice is cooked, but the grains not yet separated.
- Mix the coconut milk and salt and add it to the cooked rice.
- Leave on slow fire until the coconut milk is absorbed.
- Spoon out to a rice dish and flatten with the aid of a banana leaf. Before the rice sets, cut into
2” x 2” diamond-shaped squares by passing the knife diagonally and then again in the opposite direction.
