Aluwa
Appearances can be deceiving and especially so for aluwa. This is cut into diamond shape and looks as hard, but melts in the mouth in puffy crumbles |

50 cashew nuts |

½ lb sugar |

½ oz butter |

3 oz milk |

½ - 1 tsp rose essence |

| Serves 12 – 15 |

- Finely chop the nuts.
- Add sugar, butter and milk into a saucepan and over low heat stir until sugar melts.
- Add the nuts and cook until mixture thickens. Remove from fire.
- Add the rose essence.
- Put into a dish rinsed with cold water and cut into diamond-shape pieces when nearly cooled.
