Kokis
This is a thinner, crispier version of cookies. |

½ lb rice flour |
| 2. |
1 cup thick coconut milk |
| 3. |
¼ an egg, beaten |

½ tsp salt |
| 5. |
¼ tsp saffron |
| 6. |
Oil for frying |

Special utensils : 1 kokis mould |
| Serves 18 – 20 |
| |
- Mix flour with coconut milk.
- Add the egg, salt and saffron.
- Rest the batter for ½ hour.
- Heat the oil.
- Dip the mould in the oil and then in the batter and then back in the oil to fry it crisply.
