Kokis

This is a thinner, crispier version of cookies.
 
Ingredients
1.

½ lb rice flour

2. 1 cup thick coconut milk
3.

¼ an egg, beaten

4.

½ tsp salt

5.

¼ tsp saffron

6. Oil for frying
 
Special utensils  :      1 kokis mould
Serves 18 – 20
 
  1. Mix flour with coconut milk.
  2. Add the egg, salt and saffron.
  3. Rest the batter for ½ hour.
  4. Heat the oil.
  5. Dip the mould in the oil and then in the batter and then back in the oil to fry it crisply.
