This is very much like a rich cake with coconut.
 
Ingredients
1. ½ (roughly 125 g) a coconut
2. 1 lb jaggery (palm sugar)
3. 8 oz sugar
4. Salt to taste
5. 2 oz wheat flour
6. 4 oz cashew nuts
7. 4 oz sultanas
8. 1 oz ginger preserve
9. ¼ tsp cloves
10. ¼ tsp cardamoms
11. ½ tsp cinnamon
12. 1 tsp grated lime rind
Serves 10 – 12
 
  1. Preheat the oven at 3250F.
  2. Scrape the coconut and put into a bowl.
  3. Take a fistful of the scraped coconut and squeeze until milk oozes out. Collect the milk in a saucepan. Repeat with all the scraped coconut.
  4. Add the jaggery and sugar into the milk and bring to boil. Add the salt.
  5. Add the scraped coconut into the mixture and cook until sticky. Remove from fire.
  6. Add the flour and mix well.
  7. Add the rest of the ingredients and mix well.
  8. Bake until skewer comes out clean.
