Potato Tempered with Onions
This very easy dish is quite popular as both part of an every day meal as well as an accompaniment with yellow
rice. This also serves as a great filling for toasted sandwiches. |

4 - 6 small to medium size potatoes |

1 tsp salt |
| 3. |
¼ tsp turmeric powder |
| 4. |
1 tbsp oil |
| 5. |
1 tbsp chili flakes |

4 - 5 green chili, deseeded if desired |

1 large onion, sliced |
| 8. |
2 tsp maldive fish |
| 9. |
1 sprig of curry leaves |
| 10. |
1 ½" curry leaf |

Boil and skin the potatoes. Half the potatoes (if
small. If medium, then quarter the potatoes). Sprinkle with
salt and turmeric powder.
Heat the oil in a wok and sauté the remaining ingredients. When
the onions are turning golden, add the potatoes and toss until
well mixed. Remove from heat and serve. |
