Waraka Flambé with Palm Treacle Ice Cream
Waraka is the much loved fruit that is sweet and causes windy mischief.
Ingredients
 
1. 200 g sugar
2. 50 g unsalted butter
3. 100 ml orange cordial
4. 250 g waraka (ripe jackfruit)
5. 50 ml Kirsch liqueur
6. 4 scoops vanilla ice cream
7. 2 tbsp palm treacle
 
   
   
   
   
   
 
 
  1. Caramelize the sugar
  2. Add the butter and then the orange cordial
  3. Add waraka and mix well
  4. Add Kirsch. The heat will instantly bring out the flame
  5. Arrange on 4 separate serving plates with a scoop of ice cream. Drizzle palm treacle on top and serve immediately.
